I went shopping and got back with this!
Tuna, arugula, mushroom, cabbage, lentils, whole wheat macaroni, olive oil, passata, cottage cheese, curd cream... and obviously some diet coke... Though no more than one can a day! That's my "treat" as funny as it might sound.

Vanilla porridge with berries and chocolate sauce



Now I bet you're thinking like "Has she lost her mind?".
I kinda have lost my mind. Because this is so freaking delicious and HEALTHY! No sugar added! No empty calories!

How can this be?

Let me tell you whats in this lovely dish:
Porridge
80 g Semolina (Svenska - Mannagryn)
17 g of vanilla protein powder
Cook the semolina with water then mix in the protein powder once it's done cooking.

Berries
200 g frozen strawberries (choose frozen when it's winter, you'll save the environment)
50 g frozen blueberries
Pop them in the microwave for about 2 minutes (start with the strawberries if the blueberries are small)

Chocolate sauce
16 g of a LCD drink, in this case chocolate. (Mine is from a brand called "Allevo" though theres many different ones. Use the one you like)
Mix this with a little water. If you prefer it thicker, go for less water. If thinner, add more.

There you go! With this serving you'll get:
487 calories
28 grams of protein
82 g carbs
4 g fat

And a lot of vitamins, antioxidants, mineral and satisfaction!

Breakfast is the most important meal of the day. Don't be afraid of carbs, we need them! Our brain can not function properly without carbs. With this you'll be full for many hours! You wont have any cravings for unhealthy, sugary stuff if your breakfast leaves you satisfied.

I woke up really late today so if time sets the name for my meal, this would be dinner (only had breakfast today).

160 g Tuna
125 g Avocado
44 g corn
83 g passata (passerade tomater)
25 g Low fat cream (milda mini mat extra)

460 calories

This took me 5 minutes to make, could it be easier?

Will head to the gym in like one and a half hour to burn 600 calories ♥

Joyful breakfast



Slap me across my face and call me Santa Clause! F*ck this is good!
I'm the biggest fan of Christmas, just love it with all my heart. It has always been the best holiday of the year. There's so much love from my family and relatives, so no wonder I associate the smell and taste of Christmas food with joy, happiness and wellbeing. My favorite is gingerbread spices and saffron. So this morning I made a porridge with gingerbread spice! AHHH MY GOOOOOOOD! As soon at that scent hit me I started smiling and felt ridiculously happy! I can't stop smiling, I NEVER WILL! :)

Here I have 50 g of buckwheat, 50 g of semolina (Svenska - Mannagryn). Mix this with the love of my life, gingerbread spice. Also add 15 g of vanilla protein powder to make it even more irresistible, if that's even possible. Serve with 60 g of cottage cheese and 50 g of blueberries and you've got yourself a fairytale!

Total of 500 calories

Lunch - 350 calories



60 g protein pasta
57 g tuna
70 g tomato sauce with mascarpone
50 g arugula(?) Svenska - ruccola
20 g canned corn
= 350 calories! Deliiiiicious :)

Breakfast 500 calories



My day started with a one hour powerwalk and now I just had breakfast.
100 g of porridge mix (buchwheat, oatmeal, ryeflakes - svenska bovete, havregryn, rågflingor)
35 g of vanilla protein powder.
Cinnamon, ginger and mint(!) on top.

500 calories

I'm going to work a little then hit the gym!

What is the chicken swimming in?



Sauce! This is a home made, fat free, delicious sauce!
Mix curd cream with water and whatever seasoning you prefer and voila, you have an awesome protein sauce!
I used 70 g of curd cream, about equal amount of water, curry, tabasco & blackpepper.

48 calories!
8.4 g protein - 2.7 g carbs - 0.3 g fat

Falafel



I made something really yummy for lunch. I had some left over chickpeas in the fridge that I didn't know what to do with. So I boiled them, mixed them with garlic, onion, herbs and spices until it was like a paste. Then I made shapes like flat meatballs and cooked them in a pan with a small splash of olive oil. The white sauce is curd cream (protein!) mixed with apple cider vinegar and lemon juice - a sauce that is very low in fat, carbs and high in protein! I bet this is like 40 cals per 100 g, compared to a "normal" sauce which is like 300-800 cals per 100g.
I served this with a low calorie lingonberry jam (typical Swedish) and my love - broccoli!

This was really delicious! :)

Exact recipe (2 portions):
100 g of unboiled chickpeas
45 g of yellow onion
6 g garlic
Salt, pepper, and whatever spices you prefer. Cumin is great in this.

You can obviously use chickpeas in a can that you don't have to cook. If they are dry, they need to be soaked in water for at least 8 hours and then boiled for 45 minutes.
